Secret Pesto Sauce Recipe— The Soule Domain

If you’re cooking a cozy romantic dinner at home for Valentines Day here’s an original 1988 recipe from The Soule Domain archives:

Pesto Sauce

1 C. fresh basil leaves

1/2 tomato

2 garlic cloves

1/2 C. grated parmesan cheese

1/2 C. pine nuts or walnuts

Salt and pepper to taste

1/4 C. olive oil

1 C. white wine

1/4 C. sliced mushrooms

1/4 C. heavy cream

1/8 C. whipped butter

Cooked fettuccine or other pasta

Combine first six ingredients (through salt & pepper) in food processor. Add olive oil slowly. Put in sauce pan add wine and mushrooms, reduce for 20 seconds over high heat, then add cream and reduce another 20 seconds. Finish by adding butter and serve with fettuccine or other pasta.
