Captain Jon’s Secret Chocolate Mousse

February 1st is apparently among other things— National Dark Chocolate Day and if you know me you know I’m definitely here for it! Aside from its proven health benefits, dark chocolate is in my opinion really the only splurge of its kind worth indulging in—so much richer and more complex than milk chocolate, and a little goes a long way on the taste buds.

In honor of this day I went searching through my classic Lake Tahoe restaurant archives for a fitting recipe— this one is at least 35 years old—a true classic—and may be a great Valentines Day addition to the Soul Domain pesto pasta I posted recently.

Captain Jon’s built  in 1909 is one of the oldest buildings on Lake Tahoe located at 7220 North Lake Blvd. in Tahoe Vista. The restaurant, sadly permanently closed in recent years, was once known for it’s pier-side cocktails, seafood and sunsets. The location of Captain Jon’s a time long ago had been a waterfront casino, a post office and a destination stop for the elegant tourists aboard the old Tahoe Steamer. Prior to being named Captain Jon’s the restaurant had been named Le Petit Pier when owned by now deceased renowned French chef Jean DuFau.

Much to local’s delight Captain Jon’s reopened briefly in 2017, but it appears that tenancy was short lived— I hope one day I am once again enjoying a pier-side sunset with one of their famous Sierra Sunset cocktails or seated fireside on a snowy winter night enjoying New England Style Clam Chowder and fresh baked rustic house bread.  But until then, I’ve dusted off this decadent Dark Chocolate Mousse secret recipe for you and yours!

Captain Jon’s Chocolate Mousse

❤️ 6 Eggs Separated

❤️1/2 Cup Dark Sweet Chocolate Melted

❤️ 1 Shot of Rum

❤️ 1 Shot of Grand Marnier

❤️ 1 Cup of Cream

❤️ 3 Tbsp. Sugar

Whip egg yolks until they expand three times in volume. Whip egg whites until stiff. Add melted chocolate and alcohols to yolks, then fold in egg whites. Whip the cream and sugar together. Top mousse with whipped cream, chill and spoon into parfait glasses. Easy & delicious ❤️
